Cut vegetables into small pieces.
Heat the olive oil in a pan and add the onion. When the onion becomes red add garlic, bay leaf and carrots, stir for 2-3 minutes and finally add mushrooms, thyme and / or oregano.
Stir periodically and cook until the water from the mushrooms evaporates. Add tomato sauce and allow mixture to thicken. Remove from heat, remove bay leaf and put the mixture in a deep baking dish. Flatten with a spoon
Peel the potatoes and cut them into large cubes. Boil them in salted water. Drain and mash. Add the grated cheese and egg yolk and mix well. Season with salt and pepper.
Preheat the oven to 180° . Transfer the mashed potatoes into the baking dish above the vegetable mixture. Use a spoon.
Bake 25 minutes or until potato mixture is golden.
